Easy weekend brunch! Whole grain English muffin with a fried egg and 1/4 avocado! Add a side of low-fat cottage cheese with sliced strawberries to round out your meal!

Avocado & Egg on English Muffin
  1. Heat a non-stick pan on medium-high heat. Spray the pan with olive oil cooking spray. Break the egg in the pan and reduce heat to low-medium. Add a dash of salt and pepper to your liking, or even a dash of turmeric. Wait 2-3 minutes until the egg turns white, then flip. Cook another 1-2 minutes. If you prefer a runny yolk, turn off heat when you flip and let it cook for about 1 minute. Toast your English muffin, slice some avocado, and you’re done!
