Black Bean Burgers
A delicious and flavorful vegetarian burger – jam packed with veggies, vegetarian sourced protein and TONS of flavor! Enjoy it over a salad, in a bun, wrapped in lettuce or even just on a plate with your favorite burger toppings! Yum!

Making the Patties
  1. Drain and rinse black beans. Place in a mixing bowl and use a potato masher to blend beans and smooth into a creamy consistency. There will still be some visible beans but do the best you can to smash them. Peel and grate 1/2 of a sweet potato (about 1/2 cup) and add to the bean mixture. Add 1/3 cup of panko to the bowl. In a shallow pan, spray with extra virgin olive oil and saute chopped sweet onion and red bell pepper until cooked. Season with pink salt and black pepper. Add to mixing bowl with other ingredients and all seasonings, salsas and sauces. Mix. Using your hands, form into two large patties. Top patties lightly on both sides with remaining panko.
Cooking the Patties
  1. Heat a shallow pan on medium to high heat. Spray with extra virgin olive oil spray and cook on both sides until crispy (about 5-7 minutes on each side).
Top It Off
  1. Transfer to a plate and top with your favorite toppings! Avocado, pepper jack cheese, a dollop of sour cream, sliced tomato, jalapeno, you name it! Perfect for meatless Monday and a healthy (and quick) weeknight dinner! Don’t forget to take a picture, post, and tag with #jerseyjennskitchen!
