Ingredients
- 1 spaghetti squash medium-sized
- 1 tbsp extra virgin olive oil
- 2 small zucchini chopped
- 1 carton portobello mushrooms chopped
- 1/2 green pepper chopped
- 1 red pepper chopped
- 1 handful carrots julienne
- 1 handful cashews
- 2 tsp sesame oil
- 3-4 tsp soy sauce
- 4 tsp garlic powder
- 3 tsp ground ginger
- 1 dash sesame seeds
Instructions
Cooking Spaghetti Squash
- Pierce spaghetti squash with a fork all over on all sides. Place on a microwavable plate and microwave for 7 minutes. Flip squash over and microwave for an additional 5 until soft to the touch. Set side to cool.
Prepping and Cooking Stir Fry
- Wash and chop all vegetables. In a large pan, heat 1 tbsp of olive oil. Add all chopped vegetables and sautee for a few minutes until veggies become fragrant. Season with garlic powder, ground ginger, soy sauce, sesame oil, crushed red pepper and cashews.
Plating the meal
- Take cooked spaghetti squash and slice into rings (about 3 inches thick). Scoop out seeds and discard. Take a fork and pull the "spaghetti" from the sides until all is loose. Use the "ring" as a bowl, top spaghetti squash with sauteed veggies, a sprinkle of sesame seeds and a dash of siracha if you like heat! Serve solo or with a few wontons or dumplings along side of it!
