Ingredients
- 1 can black beans drained and rinsed
- 1/2 cup sweet potato grated and peeled
- 1/2 cup panko breadcrumbs
- 1/3 sweet onion chopped
- 1/2 red bell pepper chopped
- 1 extra virgin olive oil spray
- 2 tbsp Jack's Refrigerated Salsa
- 1 tbsp organic chili powder
- 1/2 tbsp garlic powder
- 1/2 tbsp ground cumin
- 1/4 tbsp cayenne pepper
- 1 dash hot sauce
- 1 dash dried cilantro
- 1 dash black pepper
- 1 dash pink himalayan salt
Instructions
Making the Patties
- Drain and rinse black beans. Place in a mixing bowl and use a potato masher to blend beans and smooth into a creamy consistency. There will still be some visible beans but do the best you can to smash them. Peel and grate 1/2 of a sweet potato (about 1/2 cup) and add to the bean mixture. Add 1/3 cup of panko to the bowl. In a shallow pan, spray with extra virgin olive oil and saute chopped sweet onion and red bell pepper until cooked. Season with pink salt and black pepper. Add to mixing bowl with other ingredients and all seasonings, salsas and sauces. Mix. Using your hands, form into two large patties. Top patties lightly on both sides with remaining panko.
Cooking the Patties
- Heat a shallow pan on medium to high heat. Spray with extra virgin olive oil spray and cook on both sides until crispy (about 5-7 minutes on each side).
