I’m not full vegetarian, but…
So don’t get me wrong, I wouldn’t call myself a vegetarian, but I do prefer vegetarian meals over meat. We rarely eat red meat – chicken is cooked on occasion – fish or shrimp, maybe? But honestly, if I had to go all veggie, I wouldn’t miss the meat one bit. There are SO many good ways to create meatless meals that will have your taste buds thanking you!
One of my favorite meat substitutes?
I am not a fan of a meat substitute as in a “fake meat” – but give me a black bean burger (scratch made of course) instead of a real burger any day of the week! There are a few restaurants who do these veggie burgers REALLY well…if you live in Charlotte, NC – my 2 favorite places to order this out are Bad Daddy’s Burger Bar (Grilled (not fried) and topped over a create your own salad – YUMMMO!) or 131 Main – where it can look a little off at first because they use beets in their recipe so if you take a second glance, it might look like a very under-cooked beef burger…but have no fear there is no beef in their blend.
So I decided I wanted to create my own version of a veggie burger to change things up at home and add another delish vegetarian meal to the routine. You guys – even my husband who LOVES a real burger…I mean he likes the real deal, topped with cheese, bacon, a fried egg, you name it. He even likes my version and said he doesn’t even miss the meat! Say whattt!?? Wife win!
What are the benefits of a black bean burger?
Well, obviously the “no animals were harmed in the making of this meal” – but for those who are not worried about being vegetarian but just like a healthy, easy meal – this is a great way to get some good plant based protein in without the fat and cholesterol of red meat. Top it with all of your favorites! I love adding avocado (because duh…avocado everything!) – maybe some sliced tomato and a dollop of sour cream! Or put it between a whole grain bun and add some ketchup and mustard! So yum without the guilt! Hope you enjoy the recipe!
